This salad is not only a delight to the palate but also packs a nutritional punch. Simple Tabouleh with Optional Ingredients


  • 2 cups fresh parsley, finely chopped
  • A few sprigs of mint (optional)
  • A small onion
  • 1 tomato
  • 1/4 cup or more of Dr. Moss’s Olive Oil (naturally!)
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 1/2 cup couscous or cauliflower crumbled (cooked and cooled)
  • Finely chopped walnuts (optional)


  1. Chop ingredients, course chop for the tomato and onion, finer chop for the parsley and mint.
  2. In a large mixing bowl, combine the finely chopped parsley mint with the lemon juice, and Dr. Moss’s Olive Oil. Stir to mix well.
  3. Season the mixture with salt and pepper to your liking. Toss everything until the seasoning is evenly distributed.
  4. For a heartier dish, choose one of the optional ingredients:
    • If using couscous or cauliflower, fold the cooked ingredient into the parsley mixture until well combined.
    • If using walnuts, sprinkle the finely chopped nuts into the salad and mix thoroughly.
  5. Let the tabouleh sit for about 15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
  6. Garnish with fresh lemon and a drizzle of olive oil on top

Enjoy this simple, refreshing salad as a side dish or a light main course. The optional ingredients make it versatile – with couscous for a traditional touch, or walnuts for a nutty, grain-free alternative.
